海参是一种海洋棘皮生物,常见的有刺参、梅花参、乌参、光参、瓜参等20多种,其中又以刺参、乌参、梅花参的经济价值高,在有些地区,也习惯性将海参称作为刺参,所以两者属于同一物种,无法明确区别。
刺参喜栖息在水流缓稳、海藻丰富的细沙海底和岩礁底部,我国出产刺参的主要海域有黄海、渤海海域,也就是辽宁沿海、山东沿海等地,其中以渤海湾出产的刺参品质佳,其出产的刺参刺长、体型圆润、肉厚而富有弹性,口感好。

刺参虽然含有很高的营养价值,但是也不宜过多食用,一方面是因为刺参性质温补,食用过多可能会导致热气聚集在体内,从而引起身体不适;另一方面是因为刺参含有丰富的蛋白质,如果大量食用,蛋白质难以消化,会加重肠胃负担,不利于消化,可能会引起消化不良等不适。

海参的家常做法
原料:大米饭500克,水发海参150克,火腿、虾仁各100克,葱花、精盐、香油、料酒、酱油、植物油各适量。
做法:
1、海参去内脏、杂质,洗净,切片,入水焯烫。
2、火腿洗净,上屉蒸熟,取出切片。
3、虾仁去虾线,洗净,沥干水分,从背部切开。
4、大米淘洗干净,放入容器内,加入适量清水蒸熟成饭。
5、锅中加入少许油,烧至七成热,下入葱花炒出香味,烹入料酒。
6、锅中加入植物油,烧至六成热,倒入米饭,用中火煸炒5分钟。
7、放入海参片、火腿片、虾仁炒熟,加入酱油、精盐炒匀,淋上香油,盛出。
